A different way in making your own authentic homemade noodles.

Tip to stop the cooking process is to place your noodles into an ice bath (water and ice)

Using a pasta machine is optional as it allows you to thin out you noodle dough out.

Ingredients

200g Plain flour
100g Bread flour
Pinch of cornflour
135g Cold water
3g Salt

Method

To start add all your dry ingredients in a mixing bowl mix until fully incorporate tougher.

Slowly add your water a bit at a time. While mixing the wet mess, when all of the water is added and forms a dough.

Kneed it until there is a smooth dough has been achieved. Place some cling film and a clean kitchen cloth over it and leave to rest for 30 minutes.

Once 30 minutes is up continue to knee until there are no more creases and is a smoother dough than before. Like before cover your dough and rest for another 30 minutes.

Once the last 30 minutes up take your noodle dough out on a prepared chopping board dusting your dough with some excess cornflour so it prevents it to stick tougher, now roll out your dough to flatten using a rolling pin.

Getting as thin as possible (looking to be 1m in thickness) if you are struggling to do this you can use a pasta machine to thin the noodle dough out. If you are using the pasta machine to thin out your dough.

Using setting 1 you roll the dough out and fold the dough in on itself, repeat this step 3 time then ramp up the setting to setting 2 and then repeat the process until you get up to setting 3.

Now taking your thin noodle dough using a back and though motion so it stakes on top of each other.

Cut your noodles to your designated size and length and flour with some more cornflour.

To cook your homemade noodles bring to the boil a pot of hot boiling water and place your noodles and cook for 3-5 minutes and drain them. And there you have it how to make homemade noodles.
